Ingredients:
- 2 tbsp butter
- 1/2 extra small onion (about 1/4 c.) I used red onion
- 1/2 green pepper
- 1/4 c. minced parsley (or 2 tbsp dried)
- 2 c. cooked brown rice
- About 1/2 can of salmon (or 2 cans tuna)
- salt & pepper to taste

Directions:
- Melt butter in cast iron skillet.
- Finely chop onion and green pepper and add to skillet.
- Cook until onion is translucent.
- Add rice and salmon and parsley and heat through.
- Add salt & pepper and serve
